Chicken Thai Green Curry...my all time comfort food😋😋
You can totally make a veg version, skip chicken and chicken stock
Use veggies of choice and veg stock😉😉
Chicken thighs 500gms (small pieces boneless)
Coconut milk 400mls (orginal one not the one with reduced fat)
Green curry paste 70gms (I have used a store bought)
Chicken Stock- 200mls
Palm sugar/brown sugar-1tsp
Lemon grass(optionalcurry paste has it)
Thai Basil- a handfull
Red spur chillies -2 (these aren't spicy, can also use red bell pepper)
Veggies of any kind( I have used mushrooms)
Fish sauce- 2 tsp (adjust acc to taste)
I have used pinch of garam masala and red chilly powder also
In a preheated pan, add 100mls of coconut milk and reduce it until it becomes half, then add green curry paste and cook until oil separates, add chicken, cook for about 2 minutes , add the mushrooms, the remaining coconut milk and Chicken stock, add the sugar, simmer it for 15 mins.
Now add the lemon grass,spur chillies, fish oil, let it simmer for another 5mins
Add Basil at the very end.
Adjust salt and spices according to your taste.
Enjoy with steamed rice and a dash of lemon!!
